Located perfectly in Birmingham’s growing and acclaimed foodie district, Adios is quite the experience. It’s very clear why Adios was on New York Times top ten list of best bars in America- I’ll explain why it’s accurate: The drinks are INCREDIBLE… nothing over the top and no childish stuff here. You won’t find loud and obnoxious “21 somethings”hogging the bar and wrecking the place, and you won’t have to scream just to speak to the person next to you. This is a bar for those that want to get away from all that. The drinks? Unique and consistent. But this list doesn’t insist on itself. It isn’t trying to be ostentatious- they’re simply GREAT cocktails with and extremely unique twist. And ya know, I’m NOT a tequila kind of man. Not a problem here. The “Sueno Tropical” hit the spot for me. And when I say that, I mean it literally. The Buffalo rock scent and subtle bubble reminded me of my childhood, the cognac reminded me that thankfully I’m an adult in a spot made for adults. Now let’s talk about why this spot deserves a 6th star in atmosphere? It’s all of it. It’s the entire feel to this place. I come with my work friends and we can all sit together in large, couched and comfy areas. The lighting is amazing. The music is never too loud. The feel to this place is elegantly cozy and warm. You just feel relaxed and comfortable here- an exciting bar you can actually still relax in. What a concept… The service is exceptional, too. Never did I find myself needing to find a server/bartender to reorder. They are always on point, regardless of how busy it is. That might actually be the best part about the entire experience- and it IS an experience here. With drinks out of a Latin fairytale, excellent service, and the most comfortable environment of any bar in Birmingham, Adios is without a doubt a place to put on your “can’t miss” list. One caveat to note* they do NOT serve food. These drinks will sneak up on you, so prepare to eat before or after.

I thought Adios was just a swanky cocktail bar with chill vibes and fancy cocktails. That was cool enough for me, but NOPE! They also imbibe in the club/dance scene too. Go on a weekend and you will not be disappointed! Latin tunes, great drinks, and a great crowd makes for a great night at this spot :)

Loved the Tajin on the edge of some of the drinks, classic touch for a Mexican themed bar and the Tajin sticks to Tamarind syrup. The crowd was younger overall, some older couples sprinkled around. We sat at the bar and enjoyed conversing with the bartender. January 2025 it was announced. They made the short list for the James Beard award, Best Bar. Big bar if you want to pull up, some big booths and a sofa lounge area in the back for cozy seating and conversing. They had speakers for live music near the front entry doors. No live music when we were there early evening.

I think this may be my favorite cocktail bar in Birmingham. I have only been twice so far but both times I was blown away by the drinks we ordered. The service both times was perfect. The atmosphere is so calming. We even brought our books oneday and it was nice just drinking and reading a bit.

I think This is a drinks only bar. We went and throughly enjoyed the visit. They have a great happy hour and either live music or a DJ frequently. Bree was our server and she was friendly and knowledgeable. Bar service was quick and drinks were fabulous. Fresh fruit mixers and great selection of tequila and mezcal. Super laid back atmosphere and plenty of comfortable booths and couches for relaxing. Well appointed and spotlessly clean it was a pleasure. Mentioned in food and wine magazine as one of the best in America if you’re in Birmingham you should definitely check it out. Urban Cowgill May 2025

Adios is probably my favorite place in Bham to have a cocktail. Great drinks and super friendly staff. Very much a Hispanic/Mexican themed place as the name suggests. They can make any cocktail you can think up. Really good tequila selection with options the state store doesn’t keep on the shelf. Really solid bourbon selection as well. Always my go to spot when I’m out on the town.

Wonderful cocktail bar for a romantic evening or grab a couple of cocktails for a night out. The Adios Margarita is exquisite the Che Cherry is an exquisite frozen drink. The bathroom was beautiful.

Adios is awesome! Emily, always greets me AND remembers my fav drink even tho she serves hella customers. She's so friendly and always has a smile on her face, as well as the rest of the staff! Very clean and PHENOMENAL drinks.

Oh my God, I had so much fun here. Adiós is one of the most beautifully customized, intentional, and aesthetically pleasing places I’ve been to in Birmingham. Everything about the space is gorgeous the design, the mood, the little details. You can tell a lot of heart went into this place. We visited on a Sunday night, and it was the perfect vibe. Calm, comfortable, and just right for talking, sipping, and actually enjoying your company. I did hear that during the weekend it turns into a full-on party where you can’t even move and honestly, after seeing the space, I can believe it. It’s huge, and I can only imagine the energy when it’s packed. We sat at the bar and had the best time with Chris and Brianna (with an E!). They were amazing fun, professional, welcoming, and you could tell they genuinely love working there. Hearing them speak so highly of the owner made the experience even sweeter. One of my favorite parts of the whole place was the tribute wall. I’m a family person, so seeing that dedication to their loved ones really touched my heart. It shows how much love and intention is behind the brand. They only serve cocktails no food which surprised me at first, but the drinks were honestly so good that it didn’t even matter. Every cocktail was crafted beautifully and tasted amazing. The décor, the atmosphere, the energy… all of it feels calming, intentional, and stylish. I can’t wait to go back whether for a chill Sunday night or to see the full weekend party vibe.
